Como adoro festas, e mais ainda prepará-las, acabo sempre fazendo um Natal antecipado para familiares e amigos que costumam viajar nos dias 24 ou 25 de dezembro. Nesse ano vou embarcar na sugestão que os banqueteiros Demian Figueiredo e Pila Zucca, do buffet Les Amis me deram: a bandeja de frutas natalinas com creme inglês. Acho até melhor servir em pratos diferentes, pois quem quer saborear só as frutas ou está de dieta pode fazê-lo sem problemas. Já para quem quer mais doce na vida, o creme inglês é perfeito.
Frutas natalinas com creme inglês
Ingredientes
Ameixa, Figo, Cereja, Amora e Lichia
Creme Inglês
500 ml de leite
2 favas de baunilha ou 2 colheres de café de essência de baunilha
250 ml creme de leite
8 gemas
170g de açúcar
Modo de fazer
Numa panela pequena coloque o leite, a fava cortada ao meio, metade do açúcar e deixe ferver. Em um tigela misture o restante do açúcar com as gemas até dissolver bem o açúcar. Separe uma bacia pequena com gelo e água para esfriar o creme inglês e reserve. Despeje aos poucos a mistura do leite fervido sobre as gemas mexendo sem parar. Volte a mistura para a panela em fogo baixo, mexendo sempre (não deixar ferver) até atingir 83ºC. Coe o creme numa tigela sobre a bacia com gelo, misture de vez em quando até esfriar a mistura. Cubra o creme inglês com filme plástico deixando-o em contato com o creme inglês para não formar nata. Guarde na geladeira.
